this was an item I found in my random google searches. in general there are not many birch beer syrups out there. then again there are not a lot of actual birch beers out there either so that is to be expected.
for this one I tried to just put some in some seltzer and see how it is. as the label and website really give no indication of a recipe or anything it was trial and error. thus if you make this, it may have a total different experience than I did. as I did not measure even I can’t speak to my proportions even. anyway this is not the worst thing I have had. to me, it tastes a bunch like a spiced molasses ginger snap cookie, but not really as good as that sounds. definitely not as sweet as that sounds. but the spicing is similar in my mind. the ginger and sassafras take front row on my tongue with the licorice and birch being in the back. I am not sure what chaga or juniper taste like so those could very well be in there as well. it is not something I will probably make much more of or think “oh I want to our THAT on ice cream tonight!” but perhaps I should as it was not a cheap thing.
yeah, it is ok. not really a birch beer in any traditional sense but an interesting, spiced drink that definitely falls in the “root beer” wheelhouse.
