Pittsburgh Soda Pop Birch Beer

ah, the birch beer is next on the agenda! i am quite fond of birch beers, so i am hoping this is tasty. well, i hope everything i put in my mouth is tasty really, but it often does not work out that way. at least here i have a reasonable expectation of it being tasty before i try it, unlike cough medicine or something which is never yummy in my tummy.
i again went with the seltzer method here, it is easy and works well, so why over-complicate things? i took out 12oz of sparkling water from the liter bottle as that seems to fit my tastes quite well.
well, this definitely has the wintergreen taste that is essential to a good birch beer, but it also is not too far from the company’s root beer offerings, at least the Spiced and Licorice Root Beers. there is licorice in this mix also. perhaps it is a matter of mindset, expectation in where some things are classified. if i was blindfolded i would like to think i would call this a birch beer because of the wintergreen but some root beers are not far from this taste either. interesting… i don’t really think of licorice as a flavor in birch beer but it works here. it is not the best birch i have had, but it is good. i think a little more soda should be mixed in as it is a touch syrupy but that is my own fault this time.
